Ingredients
- 14 oz Tofu
- 1 tbsp olive oil
- 1 tbsp Nutritional yeast
- 1 tsp Turmeric
- 3 Kosher salt
- Pepper to taste
- Baby spinach arugula or other greens 1 avocado, sliced thinly
- 4 10- inch Whole wheat wraps
- Optional: hot sauce chopped fresh herbs
Instructions
- 1.If you have time, drain the tofu. Wrap in a clean dish towel and place something heavy on top to press out moisture. Let it sit for up to an hour and at least 10 minutes.
- 2.Heat the olive oil in a skillet over medium heat. Crumble the tofu into the skillet and add nutritional yeast, salt and pepper. Cook until heated through, tossing to combine fully. 3.Lay the wraps on a work surface and divide the tofu scramble between them. Top with
- greens, avocado and any other toppings you like. Wrap tightly to close.
